Banana Baby Pancakes

Ingredients:

3/4 cup of all-purpose flour

1/4 cup baby brown rice cereal

1/4 cup baby organic oatmeal

1/4 cup banana puree

1/2 tbsp organic melted butter

1/2 cup whole milk

1 1/2 egg yolk

sprinkle of cinnamon (optional)

filtered water (as needed)

Recipe:

Mix all of the above ingredients until “pancake consistency” is achieved. Add water as needed to thin out.

Heat up a pan on the stove and cook like you would a normal pancake.

Tear up into baby finger food-sized pieces.

Garlic Butternut Squash

Ingredients:

1 butternut squash

water

Recipe:

Wash and halve the butternut squash

Place cut side down in a baking pan and pour in 1-2 inches of water

Roast for 60 minutes at 400 degrees until the skin starts to pucker

Take out to cool, then scoop the flesh out with a spoon.

Mash or blend and add other veggies and spices as desired (I added in a carrot, yellow squash, a roasted onion, and sprinkled some garlic powder for flavor).

 

Roasted Summer Vegetable Medley

 

Ingredients:

Golden Beet

Red Beet

Small Onion

Green Squash

Yellow Squash

Recipe:

Wash and dice veggies into cubes, then drizzle with olive oil.

Roast at 400 degrees for 45 -60 minutes until nice and golden. You may need to shake or flip the veggies half way so they don’t get too toasty on one side.

Take veggies out to cool. Once cool, peel the skins off, and whirl to desired consistency.

We portioned some of the roasted veggies afterwards and sprinkled sea salt and cracked black pepper for mom and dad.

 

Summery Golden Beet & Tomato Basil Salad

Not a baby recipe, but delicious nonetheless.

Ingredients:

1 golden beet

1 handful of ripe cherry tomatoes

meyer lemon extra virgin olive oil (I used Round Pond – we picked it up on last year’s Napa trip)

black pepper

jurassic salt (also picked up from our annual Napa trip)

fresh basil

Recipe:

Wash and cut up tomatoes and beet (peel the beet first).

Place in a bowl together, drizzle with meyer lemon olive oil, sprinkle salt and cracked pepper.

Chiffonade or tear up basil leaves and sprinkle on top.

Roasted Basil Eggplant

We received several delicious-looking eggplants in this week’s CSA basket – I was excited to whip up something yummy for Charlie (and for mommy and daddy too).

Ingredients:

1 small eggplant

extra virgin olive oil

fresh basil

Recipe:

Preheat oven to 375

Wash and peel eggplant and cut into quarters

Drizzle olive oil and sprinkle fresh basil onto the eggplant

Bake for 30 minutes

Mash until desired thickness is achieved.

Yum! I tasted this and thought it was totally delicious – It’d be tasty enough for an adult (pre-mashing of course).

 

I made our own big-person version for dinner tonight with an asian flair (sesame oil, garlic, pepper, and some oyster sauce) – yums!

Roasted Rutabaga and Carrot Puree

 

Ingredients:

1 small organic rutabaga

handful of organic baby carrots

organic garlic

Recipe:

Peel and cube the rutabaga and carrots

Drizzle some olive oil on top of the veggies and shake so they are evenly covered in oil. Add in diced up garlic or sprinkle dried garlic powder on top.

Roast in oven at 375 for 45 -60 mins, occasionally turning veggies so they don’t get too crispy on one side.

Puree in blender and add filtered water as needed to thin out.

Quick & Easy Yogurt Popsicle

Charlotte didn’t feel like finishing her yogurt cup this morning and I felt like it would be such a waste to just dump the rest (and $$!)…

I found this idea on pinterest and decided to give it a try today(albeit it was a “momsicle” idea on pinterest with breastmilk) with the remainder of her breakfast yogurt – she’ll be having this for dessert tonight!

Ingredients:

Leftover Wallababy blueberry organic whole milk yogurt

Avent pacifier

Recipe:

Scoop the leftover yogurt into an ice cube tray or baby bottle lid

Place the pacifier into the cube tray to act as the “stick”

Super fast and it’ll be easy for Charlie to hold and eat from without worrying about a popsicle stick accident!

Purple Potato & Beet Puree

Ingredients:

1 medium sized organic beet

5 small organic purple potatoes (don’t they look amazing?)

filtered water

Recipe:

Buy beets with the leaves/stems still attached – they stay fresher longer.

Wash the beet and cut off the stem.

Drizzle lightly with olive oil and wrap up in foil to bake at 375 for an hour

Peel and steam purple potatoes for 6-10 minutes until fork-tender

Peel skin off beet once finished cooking and puree in blender until smooth. Add water as needed

Add purple potato and mash together until smooth (don’t over blend otherwise the potato will become gummy due to the starch).

Serve immediately or freeze into cubes for perfectly portioned servings for later!

Warning: it may be messy so keep plenty of baby wipes on hand and be sure to put on a dark colored bib just in case!

Roasted Golden Beet, Carrot, and Quinoa Puree

Ingredients:

1 medium sized organic golden beet

cooked quinoa

1 packet of NurturMe carrot

filtered water

Recipe:

Wash beet, drizzle in olive oil, wrap in foil and bake in oven at 375 for 45-60 minutes until tender

Let beet cool, then peel the skin off (leaving the skin on during the cooking process is supposed to preserve the nutrients better)

Puree beet, quinoa, carrot packet together and add filtered water as needed to thin out the puree.

Charlie was unsure at first since it was the first time she had something with beet as the main ingredient, but liked it. I just love how vibrant the puree was! To me, the brighter the color that occurs in nature, the higher the nutritional value (who knows if that’s really true though)…

Quinoa, Apple, and Prune Puree

Another version of the below recipe, but just as delicious and it should help with the “go” if needed 🙂

Ingredients:

Quinoa

Organic apple

Organic prunes

Recipe:

Blend fully cooked quinoa, cooked apple (without the peel) or you can use a NurturMe organic apple packet, and re-hydrated prune with water until smooth.
